Cinco Jotas’ team, of veterinarians and farm specialists, monitor and care for the 100%, purebred, Iberian pigs and their indigenous habitat, the Jabugo Dehesa woodlands, in the southern peninsula of Spain. The dry-cured meat of the front hind leg, ‘Shoulder’, of the Black Iberian pig is delicate in texture and flavor, slightly salty and nutty, due to the exquisite marbling of fat. Kept on a strict exercise regiment and a diet of acorns (native to the area), the meat is rich in Omega-9 oleic acid, great for cardiovascular health, and is recommended for a healthy Mediterranean diet.
